Red mullets with vegetables in vinaigretteRed mullets with vegetables in vinaigrette

*6 red mullets in fillets

* olive oil

* 4 artichokes

*4 oz. green beans

* 4 oz. zucchini

* 2 oz. corn.

Sauce vinaigrette: ½ cup of olive oil

* 4 oz. tomatoes

*2 oz. onions

* 1 garlic clove

* 1 sprig of dill

* 2 leaves of basil

* chives

* 2 tbs. Sherry vinegar

* salt and pepper.

  • Mix all the ingredients of the vinaigrette, chopped, with ½ cup of olive oil, sherry vinegar, salt and pepper, in a bowl. 

  • Leave for one hour approximately.

  • Salt-pepper the red mullets and fry them gently in heated olive oil. 

  • Place them in a plate with the vegetables and pour the vinaigrette. 

  • Serve very hot.
