This palatial restaurant is a converted 18th century nobleman’s mansion filled with valuable antique furniture.  The wine cellar is stocked with rare Rioja vintage wines.

*6 artichokes, cut in halves

* 10 oz. runner beans

*10 oz. cardoon

* 17 oz. borage

* 24 small potatoes

* 2 garlic cloves, sliced

* olive oil

* 3 oz. cured ham, chopped.

  • (The vegetables can be replaced by other seasonal products as peas, sorrel, etc.)

  • Steam, “al dente,” all the vegetables separately.  Drain.

  • Place in each plate with the potatoes in the center.  Sauté the garlic in olive oil. 

  • Add the ham. 

  • Pour in each plate and serve.
