The restaurant has retained the rustic charm of and old country house with stone interior walls, wooden beamed ceilings and tile floors.  The imaginative cuisine is just as tasteful.

 

Shrimp RaviolisShrimp Raviolis

*72 medium size uncooked shrimps

* 1 oz. Ceps or wild mushrooms

* 2 onions, finely chopped

*Olive oil

* ciboulette and parsley, finely chopped

*salt and pepper.

  • Sauté the onions and the mushrooms, in olive oil.

  • Peel the shrimps and flatten them in a plastic bag.

  • Refrigerate at 30° F for one hour, until they harden.

  • Make a puree with the mushrooms.

  • Make raviolis with the flattened shrimps, stuffed with the mushroom puree.

  • Dress with the olive oil that was used to sauté the mushrooms.

  • Gratin the raviolis. 

  • Before serving, sprinkle with the ciboulette and the parsley.
